Funfetti Ice Cream Sandwiches
- 1-1/4 cup Plus 2 Tablespoons Flour
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Baking Powder
- 1/2 cups Butter, Softened
- 3/4 cups White Sugar
- 1 Small Egg
- 1/2 teaspoons Vanilla
- 1/4 cups Rainbow Sprinkles
- Vanilla Ice Cream, For Assembling Sandwiches
- Preheat oven to 375u0b0F. In a small bowl, combine flour, baking soda and baking powder.
- In a large bowl, cream the butter and sugar. Add in egg and vanilla.
- Gradually mix the flour mixture into the egg mixture until combined.
- Once dough is mixed, add sprinkles and stir until sprinkles are evenly distributed.
- Roll cookies into evenly-shaped balls and place on an ungreased cookie sheet. Bake 8-10 minutes or until golden. Bake the cookies so that they are soft rather than crunchy, because once they've been in the freezer, they will be hard to eat.
- Let the cookies cool completely before filling with ice cream.
