Chicken Broccoli Angel Hair
- 2 oz. olive oil
- 1 tsp. fresh garlic, minced
- 1 c. rotisserie chicken (boneless, skinless), julienned
- 1 c. broccoli flowerets, blanched
- 4 oz. chicken stock
- 1/4 tsp. salt
- 1/2 tsp. ground black pepper
- 1 Tbsp. fresh basil, stemmed, washed, rinsed and minced
- 2 oz. whole butter
- 1 Tbsp. pine nuts, toasted
- 8 oz. angel hair, blanched
- In 12-inch saute pan, combine olive oil and garlic and begin cooking so as to sweat the garlic (approximately 1 minute).
- Add chicken, broccoli, chicken stock, salt, pepper and basil and bring to a boil (approximately 3 to 4 minutes).
- Add butter and swirl into liquid mix to blend.
- Poach pasta and add to mix.
