Sweet And Sour Pork Chops
- 4 lean pork chops
- all-purpose flour
- salt
- 2 Tbsp. vegetable oil
- 1 (13 1/4 oz.) can pineapple chunks, drained
- 1 small green pepper, cut in rings
- 1 c. chicken broth
- 1 c. sugar
- 1 c. vinegar
- 1/3 c. catsup
- 2 Tbsp. cornstarch
- 1/4 c. water
- hot cooked rice
- Sprinkle chops with salt; dredge in flour.
- Brown chops in hot oil on both sides.
- Place chops in a shallow 10-inch square casserole dish.
- Top with pineapple and green pepper rings. Combine next 4 ingredients in a small saucepan; bring to a boil. Reduce heat to medium.
- Combine cornstarch and water; stir well. Add cornstarch mixture to chicken broth mixture.
- Stir constantly until thickened and bubbly.
- Pour over chops.
- Cover and bake at 325u0b0 for 1 hour or until done.
- Serve over rice.
