Beefy Bean Soup Mix
- 1 cup Green Split Peas
- 1 cup Lentils, Any Kind
- 1 cup Pearl Barley
- 1/2 cups Dried Onion Flakes
- 2 teaspoons Celery Flakes
- 2 Tablespoons Dried Parsley
- 1 teaspoon Ground Pepper
- 1/2 cups Elbow Macaroni
- In a 1-quart mason jar, layer the ingredients as evenly as possible. Place macaroni in a plastic sandwich bag and place on the top.
- Place the lid and ring on the jar and attach the instructions below.
- Beefy Bean Soup Mix
- Additional ingredients needed:
- 1 lb. ground beef
- 3 quarts beef broth
- To make soup:
- Coat a large pot or Dutch oven with cooking spray and warm over medium-high heat. Add beef and cook, stirring constantly, about 4 minutes, or until no pink remains. Drain off excess fat. Add broth and all of the jar ingredients (except the bag of macaroni) to the pot. Bring to a boil over medium-high heat. Reduce heat to low, cover and simmer for 30 minutes, stirring occasionally.
- Add macaroni and continue to simmer another 10 minutes, or until peas are tender and macaroni is cooked. Serve hot. Refrigerate any leftover soup in an airtight container for up to a week.
