Cranberry Apple Butter
- 1-1/2 pound Apples, Cored And Sliced
- 4 cups Fresh Cranberries
- 1 whole Orange, Zested, Cut Into Quarters And Juiced
- 2 cups Apple Juice
- 1 teaspoon Cinnamon, Ground
- 1/2 teaspoons Nutmeg, Ground
- 1/2 cups Brown Sugar, Or To Taste
- In a large sauce pan, add apples, cranberries and orange zest. Squeeze the juice of the orange into pot, and then add the orange. Add in apple juice, place over medium heat. Bring to a boil, cover and simmer until apples are softened and cranberries pop, approximately 20 minutes, stirring occasionally.
- Take the oranges out and discard. With an immersion blender, process until creamy and smooth. If you don't have a immersion blender, process in batches in your food processor or blender.
- Over low heat, add cinnamon, nutmeg and brown sugar. Cook for approximately 10 minutes until thick, stirring occasionally.
