Farmer’S Market Chicken Salad Wraps
- 1 whole Cucumber, Medium To Large
- 5 whole Cherry Tomatoes, Halved
- 1 whole Summer Sweet Onion, Med (i Used Cippolini)
- 1 whole Beet
- 6 ounces, weight Pre-cooked Chicken (i Used Grilled)
- 2 Tablespoons Mayonnaise (i Used Reduced-fat)
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
- 10 leaves Bibb Lettuce
- Wash all produce.
- Peel and slice cucumber as desired.
- Slice cherry tomatoes as desired.
- Slice onions as desired.
- Thinly slice beets.
- Shred or dice chicken in a bowl. Add onions, cucumbers, tomatoes, mayonnaise, and salt and pepper as desired. Mix well.
- Arrange lettuce leaves as desired on a plate. Spoon out chicken mixture next to lettuce leaves.
- Add beets as a garnish.
- The lettuce can either be used to create a wrap, or shredded or sliced and combined with the rest of the chicken mixture to make a salad.
