Brownie Bites With Strawberry Fluff Frosting
- FOR THE BROWNIE BITES:
- 2 cups Sugar
- 1 cup Vegetable Oil
- 4 whole Large Eggs
- 1-1/2 cup All-purpose Flour
- 10 Tablespoons Unsweetened Baking Cocoa
- 1 teaspoon Salt
- 2 teaspoons Pure Vanilla Extract
- FOR THE STRAWBERRY MARSHMALLOW FLUFF FROSTING:
- 1 cup Unsalted Butter, At Room Temperature
- 14 ounces, weight Marshmallow Fluff
- 1 cup Powdered Sugar
- 1/2 cups Seedless Strawberry Jam
- Pink Or Red Food Coloring, If Desired (I Used Americolor #164 Electric Pink)
- Small Nonpareils In Pink, Red, And White
- Heart-shaped Chocolates
- For the brownie bites:
- Preheat oven to 350u0b0F. Line a 24-count mini muffin tin with paper liners and set aside.
- In a large mixing bowl, stir together the sugar, oil, and eggs. In a separate medium bowl, whisk together the flour, cocoa, and salt. Add the dry ingredients to the wet and mix until incorporated. Stir in the vanilla.
- Spoon into the 24 prepared mini paper liners. Bake for 10 minutes. Then turn the heat off and leave pan in the oven for another 5 minutes. Remove pan from oven and let brownie bites cool for 5 minutes before removing them to a rack to cool completely.
- For the strawberry Marshmallow Fluff frosting:
- In the bowl of a stand mixer, beat butter until smooth and creamy. Add Fluff and beat just until combined. Add powdered sugar and jam, and mix until combined. Frosting will be a delicate light pink color. If you want the frosting to be a darker pink, add a little food coloring and mix to combine.
- For the assembly:
- Spoon frosting into a pastry bag fitted with a medium plain tip. I used a Wilton #12. Swirl frosting onto the tops of the cooled brownie bite and then immediately sprinkle with nonpareils. Gently press a heart-shaped chocolate into the top of each swirl of frosting. Beautiful!
