Banana Chocolate Chip Cookies
- 2 2/3 c. flour
- 1/2 tsp. baking soda
- 1 c. light brown sugar (firmly packed)
- 1/2 c. white sugar
- 1 c. salted butter, softened
- 1 large egg
- 1 tsp. vanilla extract
- 3/4 c. mashed ripe banana
- 2 c. (12 oz.) semi-sweet chocolate chips
- 1/2 c. oats
- 1 c. chopped walnuts
- Preheat oven to 300u0b0.
- Mix flour and soda together and set aside.
- In a large bowl with an electric mixer blend sugars and butter at medium speed, scraping down sides of bowl.
- Add egg, vanilla and banana; beat at medium speed until smooth.
- Add flour mixture, chocolate chips, oats and walnuts and blend at low speed until just combined.
- Drop by rounded tablespoonfuls onto ungreased cookie sheets, 2 inches apart.
- Bake 20 to 24 minutes or until edges begin to brown.
- Transfer immediately to a cool surface. Makes 3 to 4 dozen.
