Jo'S Chili(Healthy Eating)
- 2 cloves garlic, minced
- 2 onions, chopped
- 1 or 2 lb. meat of your choice (chicken, turkey, shredded or ground)
- 4 c. canned tomatoes (undrained) and a few fresh in the summer
- 1 1/2 tsp. salt or to taste
- 1 tsp. oregano
- 1/4 tsp. cumin
- 2 or 3 Tbsp. chili powder
- 2 (16 oz.) cans chili beans (undrained)
- 1/2 c. red wine
- Saute garlic, onions and meat of your choice in heavy kettle sprayed with Pam until meat is almost done.
- Add tomatoes and seasonings and simmer for about an hour until meat is done.
- Add beans and simmer another 30 minutes.
- Put the chili to bed and enjoy the next day when the flavors have had time to mellow.
- As for the red wine, enjoy it while you tend the chili or throw a dash in the pot!
