South Pole Hot Chocolate
- FOR THE HOT CHOCOLATE:
- 2 Tablespoons Unsalted Butter
- 1/4 cups Toffee Bits
- 1 cup Milk
- 1/3 cups Unsweetened Cocoa
- 12 ounces, weight Cream Soda
- FOR THE CINNAMON WHIPPED CREAM:
- 1 cup Heavy Whipping Cream
- 6 Tablespoons Powdered Sugar (less If Preferred)
- 1 teaspoon Vanilla Extract
- 1 teaspoon Cinnamon
- In a medium sauce pan, melt butter on low heat. Add brown sugar. Mix and allow sugar and butter to melt together.
- Put toffee bits into a food processor and pulse until it turns into a fine powder. Then add toffee and milk into the sauce pan. Mix and simmer for about 5 minutes.
- Add unsweetened cocoa. Whisk everything together.
- Add cream soda. Simmer on low for another 10 minutes or until hot chocolate starts to bubble and slightly thicken.
- Serve with cinnamon whipped cream (recipe below).
- For the cinnamon whipped cream:
- Add whipping cream, powdered sugar (by tablespoon to taste), vanilla and cinnamon together into a mixing bowl. Whisk together on high either in a Kitchen Aid mixer or using a hand mixer until stiff peaks form.
- Serve a generous dollop of cinnamon whipped cream on each cup and sprinkle lightly with cinnamon (optional).
