Halloumi Cheese Salad
- 1 cup Green Lentils
- 50 grams Cherry Tomatoes
- 3 Tablespoons Olive Oil, Divided
- 225 grams Halloumi Cheese, Sliced
- 1 Red Onion, Chopped
- 1/4 teaspoons Tarragon
- 1/2 Zucchini, Sliced
- Salt And Pepper
- Wash lentils and boil as directed in package instructions. After they have cooked, rinse with cold water.
- Heat oven to 180u0b0C (355u0b0F). Place tomatoes on baking paper and pour 1 tablespoon olive oil on the tomatoes. Bake for 10 minutes.
- Pour 1 tablespoon olive oil in a frying pan and heat. Add halloumi cheese slices and fry on both sides until golden brown. Remove from pan.
- Heat remaining oil in the same pan. Fry chopped onion until soft. Add tarragon.
- To assemble the salad, mix lentils with onion. Add baked tomatoes on top, followed by zucchini and fried halloumi cheese. Season with salt and pepper, and enjoy.
