Zingy Avocado Citrus Couscous Salad
- FOR THE SALAD:
- 1 cup Couscous, Cooked (I Like Whole Wheat)
- Olive Oil, For Drizzling
- Salt And Pepper, to taste
- 1 Avocado, Sliced Into Cubes
- 2 Oranges, Peeled And Sliced Into Rounds
- 1 Apple, Thinly Sliced
- 2 teaspoons Sesame Seeds
- Fresh Parsley Leaves, Chopped
- FOR THE DRESSING:
- 1 Orange, Juiced
- 1/2 Lemon, Juiced
- 2 Tablespoons Olive Oil
- Salt And Pepper, to taste
- Once couscous is cooked, stir in a drizzle of olive oil and salt and pepper to taste.
- Pile the couscous into a salad bowl. Layer on the avocado, orange and apple. Sprinkle sesame seeds and parsley on top.
- Mix together all the dressing ingredients in a small bowl and pour into a small jug or jar to serve alongside the salad.
- Notes: As a light meal, this dish will serve 2. As a side salad, this dish will serve 4.
