Sugar-Free Strawberry Chia Seed Jam
- 4 cups Strawberries, Sliced Into Quarters Of Chunks
- 1/2 Small Lemon, Juiced
- 2-1/2 teaspoons Cornstarch
- 1 pinch Salt
- 1/3 cups Water
- 1 teaspoon Vanilla Essence
- 3 Tablespoons Honey (add More To Taste)
- 2 Tablespoons Chia Seeds
- In a large saucepan over a medium high heat, stir strawberries, lemon juice, cornstarch and salt, stirring until cornstarch dissolves. Bring to the boil, stirring constantly. Stir in water, cover and simmer on a medium low heat for 10 minutes. (If you want a smooth jam, mash strawberries with a potato masher until you are happy with the consistency. If you want a chunky jam, don't mash them at all.) Simmer uncovered for another 5 minutes or until the mixture is thickening.
- Take the jam off the heat and stir in vanilla essence, honey and chia seeds, making sure the seeds are evenly distributed. Let jam cool for 5 minutes and then pour into glass jars with airtight lids.
- Store jam in the fridge or freezer.
