Mackerel And Green Bean Salad
- 4 whole Large Eggs
- 3-1/4 ounces, weight Sugar Snap Peas
- 3-5/8 ounces, weight Green Beans
- 2-1/8 ounces, weight Mixed Salad Leaves
- 1-7/8 ounces, weight Garden Peas
- 1 whole Avocado, Peeled And Cut Into Bite Size Chunks
- 1-7/8 ounces, weight Smoked Mackerel
- 1/4 whole Lemon, Juice Only
- 1 teaspoon Black Pepper
- Place a saucepan of boiling water over medium heat. Add eggs and leave for 3 minutes. Then add sugar snap peas and green beans to the water and cook for another 3 minutes.
- Remove eggs and briefly run under cold water. Drain green beans and sugar snap peas.
- In a large salad bowl, add salad leaves, green beans, sugar snap peas, garden peas, avocado, mackerel, lemon juice, and pepper. Give the salad a good mix, then peel eggs and quarter them over the salad, so that the yolk runs over it. Add the egg white to the salad and y're ready to serve!
