Decadent Chocolate Pie
- 1 box (9 Oz. Size) Jiffy Pie Crust Mix
- 1-1/2 cup Sugar
- 3 Tablespoons Cornstarch
- 1/2 teaspoons Salt
- 3 whole Unsweetened Chocolate Squares, About 1 Oz. Size Each
- 3 cups Milk
- 3 Egg Yolks, Slightly Beaten
- 1 Tablespoon Butter
- 1-1/2 teaspoon Vanilla
- Prepare and bake pie crust in a 9" pie dish. I use Jiffy pie crust mix and follow directions on back of box (you typically only need to add water).
- Mix in saucepan sugar, cornstarch, salt, unsweetened chocolate and gradually add milk. Cook on medium heat, stirring constantly, until mixture thickens and boils for 1 minute. Remove from heat.
- Stir half of the slightly beaten egg yolks into hot mixture, blending well. Then stir remaining egg yolks into hot mixture, blending well. Place back on medium heat and let boil 1 minute more, stirring constantly. Remove from heat.
- Blend in butter and vanilla. Pour into baked pie crust. Refrigerate for approximately 4 hours or until cold.
- Top with whipped cream, fruit or shaved chocolate.
