Dark Chocolate Oat Cookies
- 2 whole Ripe Bananas, Peeled
- 4 Tablespoons Butter, Softened
- 1 whole Egg
- 1/2 cups Light Brown Sugar, Packed
- 1/4 cups Granulated Sugar
- 1/2 cups Whole Wheat Flour
- 1/2 cups All-purpose Flour
- 3 Tablespoons Ground Flaxseed
- 1 teaspoon Baking Soda
- 1 teaspoon Ground Cinnamon
- 1 pinch Salt
- 3 cups Old-fashioned Or Rolled Oats
- 1/2 cups Dark Chocolate Chips
- Preheat oven to 350u0b0F.
- Cream bananas, butter, egg, brown sugar and granulated sugar together in a stand mixer. In a separate bowl, combine flours, flaxseed, baking soda, cinnamon and salt.
- Add dry ingredients to wet ingredients in stand mixer. Mix in oats until combined. Using a spatula, fold in dark chocolate chips.
- Using a 1/4-cup measuring cup, scoop cookie dough balls on to ungreased baking sheet. Place in oven and bake 9-11 minutes.
- Remove from oven and place cookies on parchment or wax paper to cool.
