Nanaimo Bars

  1. For the base:
  2. In a medium saucepan, over medium heat, melt together butter, sugar, and cocoa powder. Whisk in beaten egg and stir continuously until the egg is cooked and mixture has slightly thickened. Remove from the heat. Add graham crumbs, coconut and walnuts. Mix until well combined. Press firmly into a parchment lined 9"x9" baking dish.
  3. For the middle layer:
  4. In the bowl of your stand mixer using whisk attachment, cream together butter, milk, custard powder and icing sugar until smooth and creamy. Spread this in an even layer over the base and refrigerate.
  5. For the top chocolate layer:
  6. Add chocolate chips and butter into a microwave safe bowl. Microwave on high for 30 seconds. Stir. Microwave for an additional 15 seconds. Stir well. Heat for additional 15 second increments only if needed. Pour the melted chocolate over the custard layer and smooth to the edges. Chill in refrigerator.
  7. To cut into clean squares, run a knife under hot water until heated. Quickly dry the knife and slice through the bars while the knife is still hot. Repeat for each cut.
