Cheap Calorie-Friendly Zuppa

  1. In a large pot combine, water, chicken stock, veggie base, sliced potatoes and sweet potatoes. Simmer.
  2. In a medium skillet sprayed lightly with cooking spray, caramelize the onion and brown the turkey meat. Add garlic powder, red pepper flakes and fennel seeds when almost brown. Ladle in warm soup stock to keep turkey lubricated while browning instead of using oil.
  3. When turkey is no longer pink and the onions are browned, add the meat mixture to the soup pot. Add the swiss chard after the meat. Cook at a simmer for 20 to 30 minutes or until potatoes are done. Salt and pepper to taste. A light sprinkle of parmesan cheese is good with this.
  4. Serve with warm crusty bread. This also works in a slow cooker: brown meat and onions first, then combine all ingredients in the slow cooker and cook on low for 8 to 10 hours.
