Maple Apple Muffins
- 8 Tablespoons Butter, Softened
- 1/2 cups Granulated Sugar
- 1/2 cups Brown Sugar
- 2 Eggs
- 1/4 cups Applesauce
- 1/2 cups Maple Syrup, Divided
- 2 cups Flour
- 2 teaspoons Baking Powder
- 1/2 teaspoons Cinnamon
- 1/4 teaspoons Allspice
- 1 teaspoon Salt
- 1-1/2 cup Apples, Finely Diced
- 1/2 cups Pecans, Chopped
- FOR THE CRUMB TOPPING:
- 1/4 cups Flour
- 1/4 cups Brown Sugar
- 1/2 teaspoons Cinnamon
- 4 Tablespoons Butter, Melted
- Preheat oven to 350u0b0F.
- In bowl of a mixer combine butter and both sugars. Beat with a paddle attachment until well blended, about 1 minute. Add eggs and mix until fully combined, 1-2 minutes. Add applesauce and 1/4 cup maple syrup. Mix until combined, about 1 minute.
- Add flour, baking powder, cinnamon, allspice, and salt. Mix until dry ingredients are fully combined, about 3 minutes. Slowly stir in the apples and pecan until fully incorporated.
- Divide the batter among 24 muffin cups lined with a paper lining.
- For the crumb topping, in a separate bowl, combine flour, brown sugar, cinnamon and melted butter for the crumb topping. Mix with a fork or your fingers. Sprinkle the crumb topping evenly over the muffins.
- Drizzle the remaining 1/4 cup syrup over the top of the muffins. Bake at 350u0b0F for 15-18 minutes until an inserted knife comes out clean. Cool on a wire rack. Enjoy!
