Maple Apple Muffins

  1. Preheat oven to 350u0b0F.
  2. In bowl of a mixer combine butter and both sugars. Beat with a paddle attachment until well blended, about 1 minute. Add eggs and mix until fully combined, 1-2 minutes. Add applesauce and 1/4 cup maple syrup. Mix until combined, about 1 minute.
  3. Add flour, baking powder, cinnamon, allspice, and salt. Mix until dry ingredients are fully combined, about 3 minutes. Slowly stir in the apples and pecan until fully incorporated.
  4. Divide the batter among 24 muffin cups lined with a paper lining.
  5. For the crumb topping, in a separate bowl, combine flour, brown sugar, cinnamon and melted butter for the crumb topping. Mix with a fork or your fingers. Sprinkle the crumb topping evenly over the muffins.
  6. Drizzle the remaining 1/4 cup syrup over the top of the muffins. Bake at 350u0b0F for 15-18 minutes until an inserted knife comes out clean. Cool on a wire rack. Enjoy!
