Tulsa Turkey
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 1/2 c. milk
- 1 to 2 c. cheese, grated (best with mixture of Cheddar and a bit of Parmesan)
- salt and pepper
- several drops Tabasco
- several drops Beau Monde seasoning
- 2 or 3 c. turkey meat pieces
- 1/2 to 3/4 c. chopped celery
- 1/2 c. sliced black olives
- 1/2 to 1 c. sliced mushrooms
- 1 pkg. frozen cauliflower, thawed and cut into bite size pieces
- Melt butter in a large saucepan; stir in the flour and heat until mixture foams.
- Remove from heat and add milk slowly.
- Put pan over low heat and stir until thickened.
- Add the cheeses and seasonings.
- Add turkey, celery, olives, mushrooms and cauliflower, stirring gently.
- Pour into greased casserole.
- Bake at 400u0b0 for at least 30 minutes until hot and bubbling.
- Also works well baked and served in individual casseroles.
