Best Green Chili Ever
- 4 pounds Boneless Pork , Cut Into Bite Size Cubes
- 1-1/2 teaspoon Salt
- 2 teaspoons Garlic Powder (or Minced Garlic, If You Prefer)
- 3 Tablespoons Shortening Or Lard, As Needed
- 3 Tablespoons Flour
- 2 cans (4 Oz. Size) Diced Green Chilies
- 1 can Diced Tomatoes (16 Oz Can)
- 4 cups Chicken Broth/Veggie Broth Or Water
- Brown pork cubes in a deep skillet over medium-high heat until well done. Add salt and garlic or garlic powder and mix to combine. Drain any fat from the meat to one side of the skillet. Add shortening or lard to the fat until it equals a total of about 4 tablespoons then mix everything together again. Add the flour and mix it in to make a thick, almost a gravy consistency. Stir in chilies and tomatoes then slowly add broth or water to desired consistency. Simmer 30 minutes.
- I serve this chili with grated cheese and sour cream it is always a crowd pleaser!
