Cream Cheese Crunchers
- 12 oz. pkg. butterscotch morsels
- 6 Tbsp. butter
- 2 c. graham cracker crumbs
- 2 c. chopped walnuts
- 2 (8 oz.) pkg. light cream cheese
- 1/2 c. sugar
- 4 eggs
- 1/4 c. flour
- 2 Tbsp. lemon juice
- Preheat oven to 350u0b0.
- Combine over hot (not boiling) water, butterscotch morsels and butter; stir until morsels are melted and mixture is smooth.
- Transfer to large bowl; stir in graham cracker crumbs and walnuts with a fork until mixture resembles fine crumbs.
- Reserve 2 cups crumb mixture for topping.
- Press remaining mixture into ungreased 15 1/2 x 10 1/2 x 1-inch baking pan.
- Bake at 350u0b0 for 12 minutes.
- In large bowl, combine cream cheese and sugar; beat until creamy.
- Add eggs, 1 at a time, beating well after each addition.
- Blend in flour and lemon juice. Pour evenly over hot baked crust.
- Sprinkle reserved crumb mixture on top.
- Bake at 350u0b0 for 25 minutes.
- Cool completely on wire rack; cut into 2 x 1-inch bars.
- Chill before serving.
