Apple Bran Muffins
- 1 cup Apples, Peeled, Cored And Chopped
- 1 Tablespoon Sugar
- 1 Tablespoon Water
- 1 teaspoon Cinnamon
- 1/2 cups Milk
- 1/3 cups Applesauce
- 1 whole Egg, Lightly Beaten
- 1 teaspoon Vanilla
- 1 cup Bran Morsels (such As Bran Buds)
- 1/3 cups Packed Brown Sugar
- 1 Tablespoon Baking Powder
- 1 teaspoon Cinnamon
- 1/4 teaspoons Salt
- 1-1/4 cup Flour (can Use Whole Wheat)
- Cook the apples, sugar, water and 1 teaspoon cinnamon in a small saucepan over low heat until apples are softened. This takes approximately 15-20 minutes. Then remove pan from heat.
- Preheat oven to 400 F.
- Mix milk, applesauce, egg and vanilla in a large bowl. Dump in the bran morsels, mix and let the mixture sit 2 minutes.
- Mix in brown sugar, baking powder, cinnamon, salt and flour. Stir until all ingredients are combined. Add cooked apple mixture and stir.
- Spoon into 12 prepared muffin tins. Bake at 400 F for 15 minutes.
