Banana Prune Muffins
- 1 cup Pitted Whole Prunes (uncooked)
- 1 Ripe Banana (peeled)
- 1 Apple Cored, Unpeeled~ Such As Gala, Granny Smith, Honey Crisp
- 1/4 cups Prune Juice
- 1 Egg
- 3/4 cups Milk
- 1 cup Oat Bran Cereal
- 1/2 cups Oats
- 3/4 cups All-purpose Flour
- 2 Tablespoons Dark Brown Sugar
- 2 teaspoons Baking Powder
- 2 teaspoons Cinnamon
- 1 Tablespoon Vanilla
- 1 teaspoon Almond Extract
- Preheat oven to 400 F. In a food processor, process prunes, banana and cored apple until pureed. Then stir in prune juice, egg and milk just until blended.
- In a large mixing bowl combine remaining ingredients (oat bran cereal through almond extract). Mix gently until well mixed. Make a well in the center of the dry ingredients, and pour in pureed mixture. Mix until combined.
- Drop batter into 24 paper-lined mini muffin tins. Bake at 400 F for 12-15 minutes or until centers pop back when lightly touched. Check after 10 minutes, since ovens vary.
- Remove pan from oven to a rack. Cool muffins in the pan for 5 minutes. Enjoy warm. Store any leftovers (unlikely) in an airtight container in the fridge.
