Picnic Coffee Cake
- 1/2 c. walnuts
- 2 (1 oz.) sq. unsweetened chocolate
- 1 tsp. instant coffee
- 1 c. boiling water
- 1/2 c. soft butter
- 1 1/3 c. brown sugar
- 2 tsp. vanilla
- 2 eggs
- 2 c. sifted flour
- 1 1/4 tsp. salt
- 1 tsp. soda
- 1 tsp. cinnamon
- 1/2 c. dairy sour cream
- Chop chocolate.
- Place in bowl with coffee.
- Add boiling water.
- Let stand until melted.
- Stir to blend.
- Beat butter with half of the brown sugar until light.
- Beat in remaining brown sugar and vanilla until fluffy.
- Add well beaten eggs, blending well.
- Stir in walnuts and chocolate paste.
- Add flour, salt, soda and cinnamon.
- Add to chocolate paste alternately with sour cream; stir until batter is blended.
- Turn into greased and floured angel food pan.
- Bake in slow oven at 325u0b0 for 50 minutes or until cake tests done.
- Sift powdered sugar on top before cutting.
