Country Banana Muffins
- 1/2 cups Butter, Softened
- 1 cup Sugar
- 2 Eggs
- 3 Medium-size Ripe Bananas, Peeled And Mashed
- 2 cups Flour
- 1/2 teaspoons Salt
- 1/4 teaspoons Cinnamon
- 1 teaspoon Baking Soda
- 1/2 cups Milk Chocolate Chips
- Preheat oven to 350 F. In a mixing bowl, cream butter and sugar. Add eggs and beat well. Beat in mashed bananas.
- Combine the flour, salt, cinnamon and baking soda in a small bowl then add it into the creamed mixture. Stir just until moistened. Stir in the chocolate chips.
- Fill greased or paper-lined standard size muffin cups three-fourths full (recipe makes roughly 14 muffins so you will need two pans). Bake at 350 F for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Remove pan from oven and set it on a rack. Allow muffins to cool for 5 minutes before removing them from the pan. If they tend to stick, take a butter knife and run it around the edge of muffins to loosen.
