Breakfast Burritos Surfer’S Girl Style
- 3 slices Bacon, Chopped (Applewood Smoked Is An Excellent Choice)
- 1/2 whole Yellow Onion, Peeled And Chopped
- 1 whole Green Or Red (or Both!) Bell Pepper, Chopped
- 3 whole Corn Tortillas Roughly Chopped
- 4 whole Eggs
- 1/4 cups Whole Milk
- 1/2 cups El Pato Salsa De Jalapeno
- 4 whole Flour Tortillas, Warmed
- 1/2 cups Monterey Jack Cheese, Grated
- Hot Sauce
- Start by cooking bacon in a large frying pan over medium high heat until crispy. Drain bacon grease, leaving a small amount in the pan.
- Add to the cooked bacon the onion, bell pepper(s), and corn tortillas. Continue to cook over medium high heat until the corn tortillas begin to brown.
- In a medium size bowl mix the eggs, whole milk, and El Pato Salsa de Jalapeno (or your favorite salsa).
- Pour the egg mixture over the bacon/vegetable/tortilla mixture and cook over medium low heat, stirring occasionally, until the eggs are set.
- Once the eggs are set, spoon the mixture into the warmed flour tortillas. Top with the grated cheese, and more hot sauce (I like Cholula Hot Sauce, the Surfer likes Tapatio Hot Sauce...it's a personal thing in our family!), roll 'er up, and enjoy!
