Cold Spaghetti Salad With Feta
- 1 package Normal Spaghetti
- 1 package Whole Wheat Spaghetti
- Parsley
- Lovage
- Dill
- Chives
- Chervil
- 1/2 pounds, 7/8 ounces, weight Feta
- Olive Oil
- Boil the pasta until al dente. Drain and set aside.
- Chop up the herbs. Be sure to have lots of parsley and lovage; those two are the important flavours here. If you cannot get all these herbs, try Maggi Spice Mix No. 4 (although I don t know whether it s available outside of Germany). It has everything you need, although if you use it, adding some fresh parsley is still a good idea.
- Cut the feta into little cubes. Don t worry about them looking nice, they will crumble in the mixing process. The cubes are just there to facilitate the crumbling.
- Now pour a generous helping of olive oil into a serving bowl. (N.B.: If you can buy something like Patros Feta, that comes in lots of oil and it's always a good idea to use that oil.)
- Add the chopped herbs and the pasta. Top off with the feta and mix thoroughly.
- You will have to try some and adjust the seasoning to your liking.
- Let it sit for a while for the pasta to absorb all the flavours. Then dig in!
