Baked Black Beans
- 6 slices Thick Cut Bacon, Cut Into Pieces
- 1 whole Bell Pepper, Diced
- 1 whole Yellow Onion, Diced
- 2 cloves Garlic, Minced
- 1 Tablespoon Chili Powder
- 1 teaspoon Dried Oregano
- 1 teaspoon Ground Mustard
- 1 teaspoon Salt
- 1/2 teaspoons Black Pepper
- 2 Tablespoons Brown Sugar
- 1/4 cups Apple Cider Vinegar
- 1/2 cups Molasses
- 2 cans (15 Oz. Size) Black Beans
- Preheat oven to 350u0b0F.
- In a Dutch oven or large oven-safe pot, cook bacon over medium heat until it starts to brown. Add bell pepper, onion, and garlic. Cook vegetables until they soften, about 5 or so minutes. Add chili powder, dried oregano, ground mustard, salt, pepper, and brown sugar. Stir it all together and cook another 2 minutes.
- Add apple cider vinegar, molasses, and black beans. Stir everything to combine and then add water until it just covers the beans (about a 1/2 cup depending on the size of your pot).
- Transfer the pot, uncovered, to the preheated oven. Bake the beans for approximately 1 hour, or until the sauce has thickened.
