Baked Sweet Potato Fries With Curry Cilantro Mayo
- 1 whole Large Sweet Potato, Or Two Small
- 2 teaspoons Olive Oil
- 1/2 teaspoons Cumin
- 1/2 teaspoons Paprika
- 1/2 teaspoons Garlic Powder
- 1/2 teaspoons Salt
- 1/8 teaspoons Pepper
- FOR THE CURRY CILANTRO MAYO:
- 1 cup Vegenaise Or Mayonnaise
- 1-1/4 teaspoon Curry Powder
- 2 teaspoons Fresh Lemon Juice
- 3 Tablespoons Cilantro Leaves, Finely Chopped
- 1 pinch Salt
- 1. Preheat the oven 375u0b0F.
- 2. Peel the sweet potato, and cut into french fries.
- 3. Lay sweet potato fries on a large baking sheet and add olive oil and all spices.
- 4. Toss to coat and place into the preheated oven for 20 - 25 minutes, or until fries are cooked on the inside and starting to brown on the outside. Flip halfway through.
- 5. In a medium-sized bowl, add all of the mayo ingredients and mix until combined.
- 6. Once fries are cooled, dip in mayo and enjoy!
