Filet Steaks With Mushrooms And Wine Sauce

  1. Saute
  2. mushrooms
  3. in hot butter and oil for 5 minutes to brown lightly.
  4. Stir
  5. in onions and cook slowly for 2 minutes. Season and

  8. Place other oil and butter in skillet and set over moderately high heat.tfter butter foam subsides, brown steaks

  14. Pour fat from skillet.
  15. Stir in stock and tomato paste.
  16. Boil rapidly until liquid is reduced to 2 to 3 tablespoons.

  20. cornstarch
  21. and parsley.
  22. Boil rapidly
  23. for
  24. a
  25. minute to evaporate alcohol and thicken sauce. Add
  26. mushrooms
  27. and
  28. simmer

  31. minute.
  32. Spread
  33. sauce and mushrooms over steak and serve.
  34. Yield: 6 servings.
