Cinnamon-Sugar Shortbread Cookies
- 3 cups Flour
- 2 teaspoons Cream Of Tartar
- 1 teaspoon Baking Soda
- 1 cup Butter, Softened
- 1-1/4 cup Powdered Or Regular Sugar, Divided
- 2 Eggs
- 1 teaspoon Vanilla Extract
- 2 teaspoons Ground Cinnamon, Divided
- Preheat oven to 375u0b0F.
- In a medium-sized bowl stir together the flour, cream of tartar and baking soda. Set aside.
- In a separate large bowl, beat the butter with 1 cup of the sugar until light and fluffy. Beat in the eggs and vanilla extract. Next, beat in the flour mixture and 1/2 teaspoon of the cinnamon.
- In a separate small bowl, mix together the remaining cinnamon and sugar.
- Shape the dough into balls and roll in the cinnamon sugar. Place on a greased or parchment paper-lined baking pan, spacing them at least an inch apart. Then lightly press each cookie with a fork to make a crosshatch pattern on each cookie.
- Bake at 375u0b0F for about 12 minutes. Remove pan from oven and set it on a rack. Allow cookies to cool before enjoying this American classic!
