Cinnamon Apple Blender Muffins
- 2 cups Rolled Oats
- 1 Apple, Peeled, Sliced (I Used Honeycrisp)
- 1 Ripe Banana
- 2 Eggs
- 1/2 cups Apple Sauce
- 1/3 cups Agave Or Honey
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 2 teaspoons Cinnamon
- 1-1/2 teaspoon Vanilla Extract
- Preheat oven to 400u0b0F.
- Add all the ingredients to your blender and pulse for about 1 minute or until well combined. This may vary depending on the machine you are using. I used a Vitamix, which took about 50 seconds.
- Pour the batter into muffin cups. If you don't have paper muffin cups similar to the ones I used, you can use a muffin pan. It's your choice.
- Sprinkle with oats and sparkling sugar for a crunchy bite and bake for 20 minutes or until inserted toothpick comes out clean.
