Meat Ball Stew
- 1 1/2 lb. ground beef
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 egg
- 1 Tbsp. minced onion
- 1/2 c. soft bread crumbs
- 1 Tbsp. salad oil
- 3 Tbsp. flour
- 1 c. water
- 1 (1 lb.) can tomatoes
- 1/2 tsp. salt
- 2 tsp. sugar
- 1 tsp. crushed basil leaves
- 3 medium potatoes, peeled and diced (use more for larger family)
- 4 small carrots, peeled and diced (use more for larger family)
- 1 onion, coarsely chopped
- Mix ground beef with 1 1/2 teaspoons salt, pepper, egg, onion and bread crumbs.
- Form into balls the size of walnuts.
- Brown in hot oil.
- Remove meat balls from skillet; pour off all fat except 3 tablespoons.
- Blend in flour.
- Stir in remaining ingredients. Bring mixture to a boil.
- Simmer over low heat 10 minutes, adding more water if necessary.
- Add to meat balls in a 2-quart casserole.
- Bake, covered, in 350u0b0 oven 1 hour or until vegetables are tender.
- Makes 6 servings.
