Banana Bread Granola

  1. Preheat oven to 350u0b0F. Line a large baking pan with parchment paper or a Silpat baking mat. Set aside.
  2. In a large bowl, combine oats, walnuts, banana chips, cinnamon, salt, and nutmeg. Set aside.
  3. In a medium bowl, combine mashed banana, coconut oil, honey, and vanilla. Stir until well blended.
  4. Add wet mixture to oats and mix until thoroughly combined. Spread oat mixture onto baking pan in an even layer.
  5. Bake for 25-30 minutes, stirring halfway through, until granola is browned. Remove from oven and let cool completely on baking pan.
  6. Store in an airtight container at room temperature. Enjoy!
  7. Note: Granola will keep in an airtight container for up to 3 weeks.
