Banana Bread Granola
- 3 cups Old Fashioned Oats
- 3/4 cups Walnuts, Chopped
- 1-1/2 cup Dried Banana Chips
- 1/2 Tablespoons Cinnamon
- 1/2 teaspoons Salt
- Dash Of Nutmeg
- 1-1/2 Large Bananas, Mashed
- 1/4 cups Melted Coconut Oil
- 1/4 cups Honey
- 2 teaspoons Vanilla Extract
- Preheat oven to 350u0b0F. Line a large baking pan with parchment paper or a Silpat baking mat. Set aside.
- In a large bowl, combine oats, walnuts, banana chips, cinnamon, salt, and nutmeg. Set aside.
- In a medium bowl, combine mashed banana, coconut oil, honey, and vanilla. Stir until well blended.
- Add wet mixture to oats and mix until thoroughly combined. Spread oat mixture onto baking pan in an even layer.
- Bake for 25-30 minutes, stirring halfway through, until granola is browned. Remove from oven and let cool completely on baking pan.
- Store in an airtight container at room temperature. Enjoy!
- Note: Granola will keep in an airtight container for up to 3 weeks.
