Tomato Soup
- 1 pound Carrots
- 2 cloves Garlic
- 1 piece Thumb Sized, Fresh Ginger
- 1 whole Onion
- 2 pounds Tomatoes
- 3 cups Chicken Or Vegetable Stock
- 1 dash Chipotle, If You Like It Hot
- 1/2 pints Heavy Whipping Cream
- 1 pinch Salt
- Peel the carrots, garlic, ginger and onion and cut into small pieces. You don't have to cut up the tomatoes, just put them in as they are. Nice and easy!
- Place all the vegetables into a saucepan and add the vegetable stock (it will not cover completely). Bring to a boil then boil for half an hour or until carrots are tender.
- Then add chipotle, whipping cream and salt and blend thoroughly with a hand blender.
- Serve the soup with pesto and a good piece of home baked bread. You could also add cooked pasta (elbows) or Goldfish (the snack crackers) into the bowls of soup. My kids loves that! Enjoy!
