Apricot Irish Soda Bread
- 1-1/2 cup Milk
- 3 teaspoons Lemon Juice
- 4-1/2 cups All-purpose Flour
- 1/2 cups Granulated Sugar
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 2 teaspoons Baking Powder
- 1/2 cups Irish Butter, Cold And Cut Into Small Pieces
- 6 ounces, weight Dried Apricots, Roughly Chopped
- 3 whole Eggs
- 2 Tablespoons Irish Whiskey
- Preheat oven to 350u0b0F.
- Place a large piece of parchment paper into a large cast iron skillet, or a 9-inch cake pan; set aside.
- In a small glass bowl, whisk milk and lemon juice together; set aside.
- In a large mixing bowl, whisk flour, sugar, salt, baking soda, and baking powder together. Cut Irish butter into flour with a fork, pastry cutter, or your hands. Mix dried apricots into flour mixture.
- Whisk eggs, whiskey, and milk mixture together; pour into flour mixture. Mix just until all flour is incorporated.
- Form dough into a large mounded circle, and then place in prepared pan. Cut an 'X' into dough with a sharp knife.
- Bake for 45 minutes to 1 hour.
