Cheesy Ramp Biscuits
- 2 cups All-purpose Flour
- 2 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1/8 teaspoons Pepper
- 1 stick Unsalted Butter, Chilled And Cut Into 1" Pieces
- 1/2 cups Shredded Smoked Cheddar Or Smoked Gouda
- 2 whole Ramps, Chopped
- 3/4 cups Buttermilk
- Add flour, baking powder, baking soda, salt and pepper to a large bowl. Using a pastry cutter or fork, cut in butter until mixture resembles coarse crumbs. Add shredded cheese and chopped ramps and then make a well in the center. Add buttermilk and slowly incorporate it into dough. Form into a ball, wrap in plastic and refrigerate for at least 1/2 hour.
- Preheat oven to 375u0b0F.
- Roll out biscuit dough on a well-floured surface to about 1 inch thick. Use a round pastry or cookie cutter to cut out rounds. Place on a baking sheet lined with parchment paper and bake for approximately 25 minutes or until light golden brown.
- Makes 6 biscuits with a 3" cutter or 8 biscuits with a 2" cutter.
