Banana Cake Muffins

  1. Heat oven to 325 F and line two 12-count standard size muffin tins with paper liners. Spray the liners with non-stick spray.
  2. Combine dry ingredients (flour through soda) in a small bowl. In a larger bowl, mix all the wet ingredients (everything else) with a handheld mixer until the eggs start to build a bit. Add half of the dry ingredients to the wet and continue to mix until well combined. Put the mixer down and mix in the remaining dry ingredients by hand. This should prevent over mixing.
  3. Fill the muffin liners 2/3 full and bake for 20-22 minutes.
