Apple-Cinnamon Waffles
- 1 cup Brown Rice Flour
- 1/2 cups Potato Starch
- 1/2 cups Oat Flour (or Ground Rolled Oats)
- 2 teaspoons Baking Powder
- 1 teaspoon Cinnamon
- 1/2 teaspoons Salt
- 1 Egg
- 1 cup Unsweetened Applesauce
- 1/2 cups Unsweetened Almond Milk Or Other Milk Of Choice, More If Needed
- 1/4 cups Melted Coconut Oil Or Olive Oil, Plus More For Greasing Griddle
- 2 Tablespoons Pure Maple Syrup Or Other Sweetener
- Whisk together dry ingredients (flour through salt) in a large bowl. Mix in egg, applesauce, almond milk, oil and maple syrup until thoroughly combined. Add an additional 1/4 cup of almond milk if your batter is too thick.
- Brush coconut oil/butter or spray non-stick spray onto your waffle iron to keep waffles from sticking. Heat iron according to manufacturer's instructions.
- Depending on the size of your waffle iron, pour batter by the 1/2-1 cup sized scoops onto your hot waffle iron (don't add too much, it'll spread when you close the top) and cook until golden brown. Place cooked waffles on a cooling rack so they keep their crispness. You can also set your oven to the lowest temperature and place waffles on a baking sheet in the oven to keep them warm. Repeat cooking the rest of the batter.
- Yields 3-4 six-inch round waffles. May make more or less depending on the size of your waffle maker.
