Turkey Soup
- 1 turkey carcass
- 1 c. or more turkey meat
- 4 qt. water
- 2 onions, cut up
- 2 bay leaves
- 1 tsp. salt
- 1/2 tsp. pepper
- 4 sprigs fresh parsley
- 1/2 tsp. dried thyme, crumbled
- 2 cloves garlic, crushed
- 6 whole carrots, peeled and cut
- 1 bunch celery, cut up
- 3 whole potatoes, peeled and cubed or 1 c. raw rice
- Place carcass and water in a large soup kettle.
- Add onions, bay leaves, salt, pepper, parsley, thyme and garlic.
- Bring to a boil.
- Reduce heat and simmer 1 hour.
- Remove carcass.
- Add vegetables.
- Cook 35 to 45 minutes or until vegetables are tender. Add cubed turkey meat.
- For more seasoning, add 1 teaspoon poultry seasoning.
- Makes 14 cups.
