Chicken Fajita Salad
- 4 whole Boneless Chicken Breasts
- 1 package Fajita Seasoning, 1 Ounce Packet, Divided Use
- 1 whole Tomato, Diced
- 1/2 whole Green Pepper, Seeded And Thinly Sliced
- 1/2 whole Red Bell Pepper, Seeded And Thinly Sliced
- 1/2 whole Yellow Bell Pepper, Seeded And Thinly Sliced
- 1/2 whole Red Onion, Thinly Sliced
- 1/2 bunches Cilantro, Chopped
- 1/4 cups Vegetable Oil
- 2 Tablespoons Red Wine Vinegar
- Preheat oven to 400 degrees (F).
- Place chicken breasts on a cookie sheet and sprinkle each breast with fajita seasonings (use about 3 tablespoons of it). Bake for 20 minutes, then remove from the oven, cool, then cut into thin slices.
- Put chicken in a large bowl, add the rest of the ingredients and the rest of the fajita seasoning mix and stir to combine and mix well.
- You can eat this plain as a salad or on a flour tortilla. Refrigerate remaining!
