Chicken Spaghetti
- 1 (4 or 5 lb.) chicken
- 16 oz. pkg. spaghetti
- 1 can stewed tomatoes
- 1 lb. American cheese
- 2 green peppers, chopped
- 1 1/2 c. onions, chopped
- 1/4 c. Wesson oil
- 1 medium can mushrooms
- 2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. oregano
- 1 small jar pimentos, chopped
- Cook chicken and debone.
- Cook spaghetti in chicken broth and drain.
- Saute in oil the chopped onions and chopped peppers.
- Add mushrooms, stewed tomatoes and seasonings.
- Simmer 20 minutes.
- Add chicken pieces (diced).
- In casserole, layer spaghetti, layer sauce and layer cheese.
- If casserole seems dry, add broth from where spaghetti was cooked.
- Bake 45 minutes at 325u0b0.
- Serves 10.
