Cauliflower Fritters With Tzatziki Sauce
- FOR THE FRITTERS:
- 1 package (10 Oz. Size) Steam In Bag Cauliflower
- 1/2 cups Chopped Onion
- 2 Tablespoons Flour, All Purpose
- 2 Tablespoons Garlic
- 1/4 teaspoons Salt
- 1/2 teaspoons Black Pepper
- 1 teaspoon Oregano
- 1 Tablespoon Lemon Zest
- 1 cup Refrigerated Hash Browns
- 1 cup Shredded White Cheddar Cheese
- 2 whole Eggs, Lightly Beaten
- 2 teaspoons Olive Oil
- FOR THE SAUCE:
- 1/2 cups Plain Greek Yogurt
- 2 Tablespoons Grated Cucumber (peeled And Seeded)
- 1/4 teaspoons Salt
- 1 teaspoon Garlic
- 1 teaspoon Lemon Juice
- 1/4 cups Crumbled Feta Cheese
- 4 Tablespoons Chopped Kalamta Olives
- Prepare cauliflower according to package directions. Place cauliflower in a bowl and mash with a potato masher. Stir in onions, flour, garlic, salt, pepper, oregano, lemon rind, potatoes, cheese and eggs. Form into 8 patties.
- Heat oil in a large skillet. Cook patties in batches, 4 minutes on each side.
- Combine sauce ingredients in a bowl. Serve with fritters along with feta and olives.
