Skillet-Baked Bacon And Cream Cheese Cornbread
- 2 cups Corn Meal
- 1/4 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 1/2 cups Cream Cheese, Softened
- 1/4 cups Light Cream
- 2 whole Large Eggs, Beaten
- 4 slices Hickory Smoked Bacon (Cook Until Crisp And Cut Into Pieces)
- 1/4 cups Maple Syrup (warmed) Optional
- Preheat oven to 400 F. Liberally spray a 12" skillet with your favorite cooking spray. Set aside.
- In a large mixing bowl add cornmeal, baking powder, baking soda, cream cheese, light cream and beaten eggs. Stir until combined. Add bacon pieces and fold them into the cornbread batter.
- Transfer the batter into the prepared skillet, smooth the top and place it in the oven. Bake for 18-22 minutes or until golden brown. Remove from oven. If desired, warm some maple syrup to pour over each sliced wedge! This is delicious and I hope you enjoy!
