Almond Joy Breakfast Smoothie Bowl
- FOR THE SMOOTHIE:
- 1/3 cups Rolled Oats (I Used Trader Joe's Gluten Free Oats)
- 1 teaspoon Chia Seeds
- 1/2 cups Plain Greek Yogurt, 0% Fat
- 1/2 cups Unsweetened Coconut Milk (From A Carton, Not Canned) Or Milk Of Your Choice
- 1 Tablespoon Unsweetened Cocoa Powder
- 1/4 teaspoons Coconut Extract
- 1/8 teaspoons Almond Extract
- 1/4 teaspoons Stevia or Maple Syrup, To Taste
- FOR THE TOPPING:
- 1 Tablespoon Almonds, Slivered
- 1 Tablespoon Coconut, Shredded, Unsweetened
- The night before you want to serve this, add all of the ingredients (except for the toppings) into a medium-sized bowl. Mix well, cover and refrigerate overnight.
- In the morning, add the rolled oats mixture into a blender and process until smooth.
- Pour into your serving glasses, top with slivered almonds and shredded coconut and serve.
