Summer Fruit And Poppyseed Salad
- FOR THE SALAD:
- 6 cups Chopped Or Torn Romaine Lettuce
- 1/2 cups Blueberries
- 1/2 cups Hulled And Quartered Fresh Strawberries
- 1/2 cups Diced Fresh Pineapple
- 1/2 cups Mandarin Oranges (canned In Juice)
- 1/4 cups Pecan Pieces
- FOR THE DRESSING:
- 1/2 cups Greek Yogurt
- 1/4 cups Honey
- 1 Tablespoon Vinegar
- 1 teaspoon Finely Minced Shallot (onion Would Work Fine)
- 1/2 Tablespoons Poppyseeds
- 1/4 teaspoons Salt
- Divide the lettuce between two bowls and top each with half of the fruit and nuts.
- In a separate bowl, mix together the salad dressing ingredients. Whisk together thoroughly.
- Top each salad with 2 tablespoons of the salad dressing.
