Malted Milk Funfetti Blondies

  1. Preheat oven to 350 F. Line an 8-by-8-inch square pan with parchment. Lightly spray the parchment with non-stick baking spray.
  2. In a large bowl, whisk together melted butter and brown sugar until combined. Whisk in egg and vanilla extract until thoroughly combined.
  3. Stir in flour, baking powder, salt, and malted milk powder until just combined. Fold in white chocolate chips and sprinkles. The mixture will be very thick.
  4. Transfer the mixture to your prepared pan. Evenly spread the mixture into the pan, starting in the center and pushing the thick batter out towards the edges. Bake for 23-25 minutes, or until a toothpick inserted into the center comes out mostly clean (a few wet crumbs are recommended).
  5. Allow the blondies to cool in the pan completely. Transfer to a cutting board and cut into squares.
