Chocolate Cookies With Peanut Butter Filling

  1. To make the cookies, combine flour, cocoa powder, baking soda and salt in a bowl and set aside. Next, in a large bowl, beat with an electric mixer the butter, both sugars and peanut butter. Then beat in egg, vanilla and milk. Add flour mixture and stir with a wooden spoon. Shape into 32 equal-sized balls.
  2. To make the filling, mix powdered sugar and remaining peanut butter and shape into 32 balls. Wrap chocolate ball around the peanut butter ball, completely covering the peanut butter. Roll into a smooth ball.
  3. Place on ungreased cookie sheets 2 inches apart. Slightly flatten cookies with a glass dipped in sugar. Bake at 350 degrees for 8 minutes. Cool on the pan for 1 minute and then transfer to a wire rack.
