Chocolate Cookies With Peanut Butter Filling
- FOR THE CHOCOLATE COOKIES:
- 1-1/2 cup Flour
- 1/2 cups Cocoa Powder, Unsweetened
- 1/2 teaspoons Baking Powder
- 1/8 teaspoons Salt
- 1/2 cups Unsalted, Softened Butter
- 1/2 cups White Sugar
- 1/2 cups Packed Brown Sugar
- 1/4 cups Peanut Butter
- 1 whole Egg
- 1-1/2 teaspoon Vanilla
- 2-1/2 teaspoons Milk

- FOR THE PEANUT BUTTER FILLING:
- 3/4 cups Sifted Powdered Sugar
- 1/2 cups Peanut Butter Plus 1 Tablespoon
- To make the cookies, combine flour, cocoa powder, baking soda and salt in a bowl and set aside. Next, in a large bowl, beat with an electric mixer the butter, both sugars and peanut butter. Then beat in egg, vanilla and milk. Add flour mixture and stir with a wooden spoon. Shape into 32 equal-sized balls.
- To make the filling, mix powdered sugar and remaining peanut butter and shape into 32 balls. Wrap chocolate ball around the peanut butter ball, completely covering the peanut butter. Roll into a smooth ball.
- Place on ungreased cookie sheets 2 inches apart. Slightly flatten cookies with a glass dipped in sugar. Bake at 350 degrees for 8 minutes. Cool on the pan for 1 minute and then transfer to a wire rack.
