Chocolate Covered Frozen Bananas

  1. Peel bananas carefully since they are ripe. Cut off approximately 1 to 1 1/2 inches from one end of the banana. Stick a cake-pop or popsicle stick about 1/3 of the way through the cut end of the banana.
  2. Freeze bananas for at least 3 hours (preferably overnight), left uncovered to prevent ice crystal formation.
  3. When ready to start dipping, place each topping in a separate plate.
  4. Add chocolate chips and coconut oil to a tall glass that is microwave safe. The glass makes for easy dipping of the banana.
  5. Melt the chocolate and oil mixture in the microwave for about 1 to 1 1/2 minutes, stopping halfway to mix. Now you need to work quickly because the chocolate will harden almost instantly: Take bananas out of freezer, dip in chocolate (use a spoon to cover the entire banana if your glass isn't tall enough), then quickly roll into toppings (using your hands or a spoon to help you apply the toppings).
  6. That's it! Enjoy right away!
